Everyone knows that Christmas is the most wonderful time of the year, but it can often be hard for vegetarians and vegans. After all, this is a holiday that prides itself on delicious food, and much of that food involves meat and other animal products. To the carnivores of the world, Christmas wouldn’t be the festive holiday that it is without the roasted turkey, honey ham, pigs in blankets, glazed duck, beef Wellington and so much more. So, how can you enjoy the wonders of a Christmas dinner when you’re a vegetarian or vegan? You’ll be happy to know that it’s not as difficult as it may seem.
Mushroom Wellington
Beef Wellington is a firm favorite for meat eaters around the Christmas period, but you don’t have to fill the delicious pastry with meat to get into the festive spirit. Whether you use an all-butter pastry or whether you find or make a vegan alternative, it’s super easy to replace beef with mushroom. After all, mushrooms are normally an integral part of a vegan and vegetarian diet. If you’re a vegetarian and really want to make this Wellington as delicious as can be, make sure that the mushrooms are garlicky and buttery, add some wilted spinach for your greens, and then top with some blue cheese that melts perfectly in the oven.
Butternut roast
Butternut squash is the ultimate winter vegetable, and it’s also the ultimate base for your Christmas dinner. If your whole family will be eating meat and animal products during this festive period, but they don’t quite know what to make you, we have a feeling that you might have to tear some of them away from trying this dish. That’s because this recipe – which features a whole butternut squash filled with onion, lentils, cranberries, nutmeg, red wine, spinach, nuts, and anything else you may want – is delicious in every way. If you’re making this for yourself, just make sure that you don’t fill up your squash with the vegetables you’re going to be eating on the side. You don’t want to overload yourself with the same veg as much as you may adore those greens.
Eggnog
We know what you’re thinking, eggnog is totally not vegan, right? Well, it can be. You don’t have to scrimp on Christmas traditions just because you choose to avoid animal products, which is why everyone needs to make vegan eggnog. Of course, you can also add a few shots of your favorite spirit if you want to spice things up a bit. To make vegan eggnog, you’ll need coconut milk, Medjool dates, maple syrup, nutmeg, cinnamon, turmeric, water, and salt. The end result is so delicious and flavorsome that you’ll definitely have to pace yourself…
Being vegetarian or vegan shouldn’t stop you from enjoying the festive period, but so many people feel as though they are held back by the non-meat options that are available. So, if you can’t buy these options in store, why not make them yourself? They’re super easy, healthy, and delicious.
